Edit Value activates the value field so you can enter or change a value for the variable. You can also click on the value in the Variables Window to activate this field.
To use just right click on the variable you wish to adjust and select Edit Value. Enter in the new value and hit the Enter key on your keyboard.
This option is disabled for internal groups, such as Material Variables.
